Honey Lavender Spritzer

This is one of my go-to drinks as the weather gets a little warmer, made with lavender-infused honey, Dolin Blanc, club soda and prosecco.

Ingredients

SERVINGS: 1 Cocktail
  • 2 ounces Dolin Blanc (an inexpensive light vermouth with nuances of pineapple, pine and elderflower); Lillet is also a good alternative
  • ¼ ounce lemon juice
  • 1 ounce lavender-infused honey water*
  • 1½ ounces prosecco (or cava)
  • 1½ ounces club soda

Preparation

Combine first 3 ingredients in a wine glass with ice. Add the prosecco and club soda; stir well. Garnish with a lavender strand and lemon wheel.

*Honey Water: In a pot, combine 1 pound honey with ¾ cup water. Add approximately 4–5 strands of culinary lavender, chopped. Simmer over medium heat for about 8 minutes. Turn off the heat and let the lavender sit in the honey water for about 10–15 minutes. Strain. Bottle and keep refrigerated.
