The Bellini (a classic cocktail originating at Harry’s Bar in Venice, Italy by Giuseppe Cipriani) is a combination of fresh peaches, blended to make a purée and topped with prosecco. It’s as simple as that. This version (inspired by the popularity of the Aperol Spritz) is the Bellini meets the Aperol Spritz meets the Mimosa as a fun frozen drink.

Ingredients

  • ½ cup fresh (or frozen) peaches
  • ¾ ounce peach liqueur
  • ¾ ounce Aperol
  • 1 ounce orange juice
  • 4 ounces prosecco
  • ½ cup ice
  • Garnish: Peach chunk

Preparation

Combine all the ingredients in a blender cup with the ice. Blend on HIGH for about 30 seconds, until smooth. Pour into a champagne flute. Garnish with a peach chunk.
