Watermelon Manchego Salad

WITH ARUGULA and roasted pumpkin seeds, this sweet and salty combination is not your everyday salad.

Ingredients

Chipotle honey dressing
  • 2 tablespoons honey
  • 1 ounce sherry vinegar
  • 6 ounces grapeseed oil
  • 1 teaspoon chipotle powder
  • Pinch kosher salt
Salad
  • 2 cups watermelon, large diced
  • 1 cup Manchego cheese, medium diced
  • ¼ cup toasted pumpkin seeds
  • 2 cups arugula

Instructions

Mix the honey, vinegar and spices together in a small bowl. Slowly whisk in the oil.

Toss salad ingredients with the dressing, adjusting salt as needed.
