Why We Love It: Produce is king in Chef Charleen Badman’s kitchen. Not only do vegetables get the same attention as meat, they are almost treated like it. Beets get a dousing of vadouvan (similar to a curry), grilled asparagus is joined by crispy polenta, butternut squash gets a kiss of miso butter.
