Preparation
2 ounces date-infused rye
¼ ounce demerara (or turbinado) syrup
2 bar spoons sherry (recommend Pedro Ximenez)
3 dashes raisin-infused bitters (or regular Angostura bitters)
Orange twist, for garnish
Combine rye, syrup, sherry and bitters in a mixing glass filled with ice. Stir for 25 seconds. Strain into an Old Fashioned glass. Express with an orange twist and serve.
Date-Infused Rye:
Pit and chop a dozen dates. Place in 64-ounce Ball jar and add 1 bottle of rye whiskey. Infuse for a week; alternatively, sous vide at 155°F for 1 hour. Strain and bottle.
Demerara / Turbinado Sugar Syrup
Combine 2 parts demerara or turbinado sugar with 1 part water into pot over medium heat. Stir until sugar has completely dissolved. Take off heat, bottle and refrigerate.
Raisin-Infused Bitters
Combine ¼ cup raisins with 4-ounce bottle of Angostura bitters. Infuse for 3 days at room temperature; alternatively, sous vide for 155°F for 1 hour. Strain and bottle.
