Welcome to Arizona

This mesquite-based Whiskey Sour is made with Redemption Bourbon, mesquite, cacao, lemon and egg white. Mesquite beans flourish here from the summer months into fall; they are easily transformed into a delicious syrup redolent with maple, malt, molasses and caramel. When the pods fall from the trees, they can be cleaned and made into a syrup by adding them to water (approximately 50 pods per gallon of water) and letting it steep overnight. This method produces the best taste. However, if you don’t have the patience or they are not in season just yet, try the fast version below.

Welcome to Arizona Cocktail

2 ounces Redemption Bourbon

¾ ounce lemon juice

¾ ounce mesquite syrup

¾ ounce egg white

Combine all ingredients in shaker with ice. Shake and strain into a coupe. Garnish with lemon peel expression.

Fast Mesquite Syrup

Yield: 750 ml (about 3 cups)

1 tablespoon dried mesquite powder

1 teaspoon cocoa powder (optional)

4 cups sugar

2 cups water

Combine all ingredients in blender. Start on low; ramp up to high for 1 full minute. Voilà! Mesquite syrup.
