Mushroom Tasting

I could write a word salad describing how these mushrooms taste, but it would be much better for you to try them yourself. Buy a sampler of mushrooms that you have never tasted—try them all. I taste-tested lion’s mane, king trumpet, oyster and maitake (hen-of-the- woods).

Prepare them according to this simple recipe. Sample and compare flavors with family and friends. Become your own expert.

Ingredients

  • 1 tablespoon olive oil or butter
  • 1⁄8 teaspoon salt
  • 1⁄8 teaspoon freshly ground black pepper
  • ½ pound mushrooms, finely sliced or cut
  • Good crusty bread, sliced and lightly toasted
  • Olive oil to brush bread

Preparation

Heat a medium skillet over medium flame. Add oil or butter, salt and pepper. Add mushrooms, 1 variety at a time, and stir until they cook down, a few minutes. Some will brown more and others will collapse and get soft. Remove from heat and set aside. Wash out the pan and repeat with the other mushrooms, 1 variety at a time.

Toast bread and cut each slice in 2- to 3-inch pieces. Brush lightly with olive oil. Spoon mushrooms onto bread, keeping the different types separate.

Pass the mushrooms around. Compare. Discuss.
