Gluten-Free Almond Cookies

THESE COOKIES are tender and fragrant from the citrus zest.

Ingredients

  • 4 cups almond flour
  • 2½ cups granulated sugar
  • Zest from 1 lemon
  • Zest from 1 orange
  • ¾ cup egg whites
  • 2 tablespoons almond extract
  • ¼ cup sugar for dusting

Instructions

Add first 4 ingredients to a bowl and combine well.

Place egg whites in a standing mixer and whip until soft peaks form. Add dry ingredients together with the almond extract into the whipped eggs and gently mix with a paddle attachment until a soft dough is formed.

Scoop the mixture onto a parchment-lined baking sheet with a 1-tablespoon scoop, leaving room for the cookies to spread as they bake. Dust the cookies with sugar and bake at 325°F for 14 minutes.
