Microgreen Mousse

Preparation

Blend all ingredients until smooth. Garnish with a mint sprig.

Ingredients

  • 2 generous handfuls of pea shoots or sunflower microgreens
  • 1 avocado
  • 2 tablespoons lemon juice
  • 1 cup milk of any kind
  • 1 banana
  • 1 cup pineapple chunks
  • 1 tablespoon flax or chia seeds
  • 1–2 tablespoons honey, to taste
  • Mint sprigs for garnish and/or to add to the mix (optional)
