Lighthouse Salsa

A delicious salsa that is a perfect addition to the Bean and Corn Soups Married Together but it's also good in its own right. Given to a friend by a lighthouse keeper in Mexico (hence the name).

Ingredients

SERVINGS: 2 Cup(s)
  • Juice of 2 limes
  • ½ small onion, minced
  • 2–3 green onions, minced
  • ½ bunch cilantro, chopped
  • ½ jalapeño chile, finely minced (more or less to taste)
  • 1 yellow (mild) pepper, finely minced
  • 3 cups chopped tomatoes, good-quality canned or fresh
  • 2 teaspoons ground cumin
  • 2 cloves garlic, minced
  • Salt and sugar to taste

Preparation

Mix together all ingredients. Taste and adjust seasoning.
