Easy Energy Skillet

ENJOY THIS sauté as a bowl. Serve with sriracha-style sauce or another favorite condiment.

Ingredients

  • 2 pounds ground beef or ground turkey
  • 2 medium zucchini, small diced
  • 1 head broccoli including stem, cut bite size
  • 2 tablespoons nutritional yeast (optional)
  • Salt and freshly ground black pepper, to taste
  • 4 cloves garlic, minced
  • 1 bunch kale, stemmed and sliced thin (fresh spinach is a great substitute)
  • ¼ cup grated Parmesan cheese (even the “green can” kind will work)

Instructions

Brown the meat in a large skillet. Drain off excess fat.

Add zucchini, broccoli, optional nutritional yeast, salt and pepper. Cook for about 5 minutes tossing with the meat until veggies are just tender.

Add garlic and kale, tossing and cooking for an additional 5 minutes.

Add Parmesan cheese and cook for about 2 minutes, until the cheese starts to melt. Remove from heat and serve.
