Why We Love It: Slow Food is the only grassroots organization working with members and volunteers locally, nationally and internationally to link the pleasures of good food with a commitment to community and the environment.

A major Slow Food project to preserve biodiversity is the Ark of Taste, a recognition of endangered foods in the United States and the world (see http://slowfoodusa.org/ark-of-taste for a list of foods from the Southwest region including Sonoran white wheat, chiltepin peppers and recent entries for cholla buds, Sonoran quince and masa patties for Sonoran enchiladas).
