We’ve been fans of Jason Wyrick and his vegan cooking since he told his “I was a junk food vegan” story in the pages of Edible Phoenix many years ago. His latest effort, Vegan Tacos, is not just a recipe book. It delves into Jason’s family lore, archaeology, the history of the taco, the ingredients, how to use the equipment needed, cooking techniques and, most importantly, how to make your own tortillas (either from nixtamal or masa harina) to cradle all of the well-crafted taco components together. The recipes can be made as-is for vegan diners (there’s even a vegan chorizo) or adapted with some dairy products for vegetarians. You’ll find the fillings to be creative but familiar enough that they can be added to your everyday cooking repertoire.
