
Carrot Peach Smoothie
Peaches and smoothies go together like lime and Margaritas. The peaches can be a central focus or they can complement other flavors, like carrot, spice, orange and nuts. This smoothie is a take on carrot cake, but with peaches to add a nice fresh brightness, showing how flexible and how diverse peaches can be.
Ingredients
- ½—¾ cup fresh peaches cut into chunks (frozen peaches work well too)
- 2 ounces carrot juice
- 2 ounces orange juice
- 2 tablespoons chopped walnuts (optional)
- 2 dashes ground cinnamon (optional)
- 2 dashes ground nutmeg (optional)
- 1 ounce Seedlip Grove, a non-alcoholic spirit infused with orange, ginger, lemongrass and pepper (optional)
- ½ cup almond milk
- ¼ cup honey
- 1 cup ice
- Garnish: Peach chunk, carrot top, chopped walnuts
- Optional: Reserve 1—2 peach chunks and 1 tablespoon walnuts if you like your smoothies chunkier with bits of fruit and nuts.
Instructions
- Combine all the ingredients in a blender cup with the ice. Blend on HIGH until smooth, about 30 seconds to 1 minute. (If using frozen peaches and more liquid is needed, you can add more orange juice and almond milk.) Chunky option: After blending until smooth, add a couple more peach slices and a tablespoon of walnuts. Pulse 3—4 times. Pour contents into glass. Garnish with peach chunk, carrot top and chopped walnut.
