Baked Cushaw Sections

Any winter squash or pumpkin (except spaghetti squash) can be substituted in all these recipes. But they won’t taste quite the same.

Instructions
 

  • For a simple and satisfying treatment, cut some squash into serving pieces leaving the rind in place. Bake in a 400° oven for 45–60 minutes, until the flesh is tender. Serve individual sections with butter, salt and a grind of pepper. The rind makes its own bowl.
