Why We Love It: Mediterra makes rustic loaves using the century-old techniques employed by traditional bakers in their native island of Chios in the North Aegean Sea. Most of the bread is made with nothing more than flour, water, salt and time (instead of a lot of yeast) and thus darker, heartier and more flavorful than your grocery store varieties. The bakery’s kitchen is in open view of the counter, so you can see four or five bakers working at their craft during your visit.
