In the beginning there was Tobasco. Next came Cholula. Then regional hot sauce varieties. Now, the universe of hot sauces has exploded. Fabulous cook and hot-sauce artist Tanya Chakravarty is coming to teach us how to create our own tasty, tongue-tingling hot sauces. Tanya is our go-to person for advice on all things related to chili peppers and hot sauce. She grows her own peppers then mixes up custom sauces full with flavor. Tanya will share her insights, recipes and favorite peppers in this workshop. You’ll learn safe practices for handling peppers, how to blister and skin a chili, and Tanya’s technique for how to smoke chilies and create your own chipotles and adobo. Tanya will walk you through the basics of making a great hot sauce and offer ideas on many ways to change it up and make it your very own by adjusting ingredients, using red or green chilies, adding fruit, and using prickly pear.  This is a make and take class so you’ll got home with samples of hot sauce and pepper vinegar. Plan on lots of fiery fun and tasting. This is a three-hour class.
