Why is that cooking for a crowd is the cat’s meow when cooking for ourselves should be just as pleasurable? In this class, we’ll prep a work week’s worth of meals. The focus will be on Sunday meal prep for the week and then organizing the menu such that we cross-utilize items prepped and cooked through the week that can become new meals later in the week. We will make Sheetpan Chicken & Sweet Potatoes with Salad of Sauteed Kale Cranberries & Pepitas; Roasted Pork Tenderloin with Ratatouille over polenta; Oven-Roasted Salmon with Cucumber Mint Quinoa Salad; Polenta Lasagna with Roasted Vegetables and Red Pepper Sauce; Chicken, Quinoa and Kale Pesto Salad Bowl; Chocolate Peanut Butter Pot Pie; Carrot Cake for 1-2; and Oatmeal Craisin Cookies.
